A Southern Lady Will Cook, Easy Lasagna Casserole


If you follow my blog, you know that my Aunt Martha gave me a new cookbook for Christmas titled, "A Southern Lady Cooks." If you follow my blog, you also know that I vowed to blog about my cooking adventures as I tried different recipes in the book. About two weeks ago I attempted my first recipes from the cookbook, Easy Lasagna Casserole. I think it turned out great! And Timothy said he would love to have it again, which is a huge compliment when it comes to lasagna because it is one of his favorite foods when done well. On a side note, as I cook these recipes I am trying to work in more healthy ingredients than it may call for, because (as you can imagine) a cookbook titled, "A Southern Lady Cooks," is not exactly the healthiest cookbook out there.


This recipe combines egg noodles, ground beef, tomato sauce, evaporated milk and cream cheese.


I used the no-yolk egg noodles to add that healthier spin.


I used ground turkey and spiced it up with a prepackaged dry spaghetti spice mix and then added the tomato sauce as well.


The evaporated milk and cream cheese is combined and warmed on the stove to create a cheese sauce that serves as the ricotta substitute (as compared to a traditional lasagna recipe). I used fat free cream cheese here. Combine the cooked noodles with this pseudo-cheese sauce.


Ensemble a baking dish as follows: noodle mixture; beef mixture; top with mozzarella cheese
 (fat free or low fat of course).


Bake at 350 for 20 minutes and Enjoy!
